Why Does Chilly Colour and Pungency Fade During Grinding — And How Do You Stop It?
Ask any chilly processor about their biggest headache, and heat comes up almost every time. Grind red chilly too aggressively or too long, and you lose the very things that make it valuable — its deep red colour, its capsaicin heat, its aroma. Premium Pulman's Chilly Grinding System was built to solve exactly this problem, using design principles we've refined over 20-plus years of manufacturing size reduction equipment for India's spice industry.
This isn't a repurposed general-purpose mill with "chilly grinding" stamped on the label. It's engineered around the specific behaviour of dried red chilly — its oil content, its heat sensitivity, its tendency to clog fine mesh screens if the grinding chamber runs hot.
Built Around the Chilly, Not the Other Way Around
Dried chillies carry natural oils that release under mechanical stress. Push the grinding speed too hard, and that oil starts cooking the product from the inside — which is what causes the browning and flavour flattening processors dread. Our system manages this through controlled grinding speeds paired with cooling arrangements that pull heat away from the chamber continuously, not just at intervals.
Technical Specifications
The Chilly Grinding System is available in multiple capacity configurations depending on your daily throughput needs, from smaller commercial units to continuous industrial-scale lines. Construction is available in mild steel or stainless steel, with stainless steel typically preferred for export-grade or hygiene-sensitive operations. Screen and mesh sizing is configured to your target fineness — whether you're producing coarse chilly flakes or fine powder for masala blending. Jacketed cooling systems are integrated where continuous operation demands sustained temperature control.
Mild Steel (MS) / Stainless Steel (SS 304 / SS 316) for export & food-safety compliance.
Jacketed cooling chamber prevents oil cooking, preserving vibrant red colour & capsaicin heat.
Adjustable screen & mesh settings for coarse chilly flakes to fine masala blending powder.
Handles all dried red chilly varieties without clogging, caking, or oil loss.
Silent Features
Jacketed cooling chamber to preserve colour, pungency, and aroma
Adjustable mesh configuration for flake or fine powder output
Dust containment to protect both yield and workspace air quality
Sturdy construction suited to continuous, daily industrial operation
Low downtime design built for high-throughput processing environments
Working Principle
Dried chilly is fed into the grinding chamber, where high-speed impact breaks the pods down into progressively smaller particles. Because chilly is particularly heat-sensitive, the jacketed cooling system draws heat away from the chamber throughout the grinding cycle rather than letting it build up. Ground material passes through a screening stage where particle size is separated — anything oversized gets routed back into the grinding chamber for another pass, while correctly sized material moves to collection. The entire process is built to minimize the time chilly spends under mechanical and thermal stress, since that's what protects the final product's quality.
Why Choose Premium Pulman's Chilly Grinding System
We've spent over two decades installing size reduction equipment across India's spice processing sector, and chilly grinding is one of the applications we understand at a granular level — no pun intended. Every unit goes through our in-house design approval and dimensional inspection process before it ships. And if you want proof before you commit, bring your own chilly stock into our demonstration room. We'll run it through the system so you can judge the colour, texture, and consistency of the output yourself.
